Ingredients

Main Ingredients

  • 1 pound ground beef (80 to 85% lean) Higher fat keeps it juicy
  • 4 large flour tortillas Burrito size works best
  • 1 cup shredded cheddar cheese For sharp flavor
  • 1 cup shredded mozzarella or American cheese For extra melt
  • 1/3 cup yellow onion, finely diced Can use white onion too
  • 1/4 cup dill pickles, chopped Adds tang and crunch
  • 2 tablespoons ketchup Classic burger taste
  • 1 tablespoon yellow mustard Balances the sweetness
  • 1 teaspoon garlic powder Easy all over flavor
  • 3/4 teaspoon salt Season in layers
  • 1/2 teaspoon black pepper Freshly ground if possible
  • 2 tablespoons butter or neutral oil For crisp tortillas

Instructions

  • Step 1 - Cook The Beef: Heat a skillet over medium heat with a bit of oil. Add the beef, season with salt, pepper, and garlic powder, and let it brown. Break it apart and cook until no longer pink.
  • Step 2 - Add Onions And Burger Flavor: Stir in diced onion and cook until soft. Add ketchup and mustard and stir to coat the beef evenly.
  • Step 3 - Prepare Your Tortillas And Cheese: Lay out the tortillas and mix the cheeses. Warm tortillas briefly if using gluten-free ones.
  • Step 4 - Build The Quesadillas: Place a tortilla in the skillet, sprinkle cheese all over, add beef to one half, top with pickles and optional extras. Add more cheese and either fold or top with another tortilla.
  • Step 5 - Toast Until Golden: Add butter around the edge, cook until bottom is golden and crisp, flip carefully, and cook the second side until golden and cheese is melted.
  • Step 6 - Rest And Slice: Let quesadilla rest for 1 minute before slicing into wedges. Serve warm with your choice of dipping sauce.

Notes

Use gluten-free tortillas and condiments to make this recipe gluten free. Customize your quesadilla with extras like bacon, jalapeños, or shredded lettuce. For meal prep, make the beef mixture ahead and store it in the fridge.
